This is my go to meal when I am in a hurry and need a fill of veggies and energy and only takes about 10 minutes to get on your plate.

Really easy stir fry

Veg to stir fry (I usually use a stir fry medley from Tesco)

½ bag beansprouts

3 tablespoons tamari (or soy sauce)

1 tablespoon rice vinegar

1 tablespoon maple syrup

1 chilli

Noodles (I either use vermicelli noodles or buckwheat noodles)

Prepare the tamari, vinegar, syrup and chilli in one bowl to allow the flavours to blend

Cook the noodles as per instructions on packet & rise under cold water to stop them cooking

While the noodles are cooking chop the veg and heat some of the sauce mix in a wok, stir fry the veg for a few minutes until cooked (3-5 minutes depending how well you like your veg cooked).

Put the cooled noodles in to a bowl, add the stir fry veg then pour over the rest of the sauce mix.

I like to garnish with some coriander (but I know that is a love/hate garnish)
