Summer is on it’s way and we are thinking about getting in to your beachwear, keeping food simple and quick to make is always my priority, there is nothing worse than having to faff about for ages or spend loads of time preparing just to get a meal.

Summer Stir Fry

Veg – any you like, you can opt to get a bag of the pre-cut, pre-mixed stir fry or select your favourite veggies beansprouts are great to bulk up your meal

Pressed Tofu (or meat or fish of your choice)

Rice noodles or soba noodles (I am really loving the buckwheat soba noodles at the moment)

3-4 tablespoons Soy Sauce (or Tamari for the gluten free option) – you might need more if there is a lot of veg but you can add more later if it gets soaked up

1 tablespoon Maple Syrup (or honey)

1 tablespoon Rice vinegar (optional)

Chilli (optional or to taste)

Fresh ginger (grated about 1inch squared)

1 clove minced garlic

Boil your noodles to the packets instructions

While they are cooking in a large frying pan or Wok heat a little bit of oil (coconut, almond, sesame are all nice)

Add soy sauce, maple syrup, rice vinegar

Then chilli, ginger, garlic and stir round for 1-2 mins

Add tofu / meat and cook off

Add your veg and cook to preferred texture

Drain off your noodles and add to a bowl, pour over your stir fry and enjoy.

You could garnish with coriander (or not if you don’t like it)
