It’s the weekend and after a few weeks of tofu recipes I thought it would be time for a treat… and OMG these are a treat! I found this on pinterest but as always I like to change it up a bit

Peanut Butter, Chocolate Melts

1 ¼ cups chickpeas (if they are from a can, drain them and pat them dry, I use sprouted chickpeas)

2 teaspoons vanilla extract (I used vanilla bean paste)

½ cup (heaped) peanut butter (or any nut butter of your choice)(ideally no added sugar)

¼ cup honey or maple syrup

1 teaspoon baking powder (I used bicarb soda, I still have no idea what the difference is)

Pinch of salt if your nut butter is also unsalted

½ cup dark chocolate chips (I used half a block of 85% dark chocholate and smashed it up to get roughly ½ cup of chips)

Preheat the oven to about 160deg (fan assisted)

Put everything except the chocolate chips in to your food processor and blend until you have a smooth mixture, you might need to scrape the sides to move any bits of chickpea down in to the mix

Then stir in the chocolate chips

I used a round soup spoon and spooned out around 14 balls (if you want them more like cookies, use a fork to press them down a bit)

Bake in the oven for 10 mins

Eat when warm… make sure there are people around to share them with or you will eat them all
