I love when the colder darker nights start to come in… That means soup season for me…. The first pot of the year for me was a childhood favourite which I have added some stuff to just for some extra nutrients and flavour

Potato & Leek Soup

2 large leeks

1 large onion

3 stalks of celery

3 medium potatoes

Fresh Basil (handful)

1 clove of garlic

4 teaspoons of bouillon (or any stock powder/cubes)

 

Chop all the veg up, put the leeks, onions, celery in to a pot over heat and let it sweat, there should be enough heat to release the juice from the veg, add in the bouillon powder and mix through.

Once the veg has started to soften add the potato, basil, garlic and add enough boiling water to cover the ingredients (more if you like thinner soup, less if you like thick).

Bring to the boil and leave to simmer for about 60 mins, blend and enjoy.

Alternatively, chop it all up, chuck everything in the slow cooker, switch it on and leave it to cook for 6-8 hours.
